I do seem to remember vacuum and non-vacuum Pingle options from checking some years ago but now I see Pingle's site only lists the non-vacuum as the valve for Valks.  I, too, always turn the valve off.  This then is the difference between the two options?  That is, whether or not you shut the fuel off when not in use?

Yes, that is the difference.  The valve with the vacuum will shut off the flow of fuel automatically when the engine is turned off.  If the valve does not have the vacuum option, you must turn it off manually.

Good info.  I guess that means that if you get the current (non-vac) Pingle valve you must also be prepared to cap off either the vac hose or its source (#6 intake manifold, I think)?

Yes. Put a cap on the nipple on #6, that way eliminate any possible vac leaks in the line.
